The best double chocolate vegan cookie and its banana heart

I am being extremly serious here 🙂 To get some of your concerns done you just need a husband/boyfriend/mate for life or something similar to that. If not, don’t worry the neighbor downstairs might even do the job 🙂

Your concerns: 

1.I’ve been postponing it for so long and now the laundry is litteraly bursting my couch’s banks, waiting for someone ready to iron.

2. I have to do the taxes but as usual, I never know which boxes to fill and which ones to leave away. This is driving me nuts and I might blow a fuse if this takes a minute longer.

3. I cannot see my children anymore in the garden. I cannot deny it anymore. I need to mowe the lawn.

The double chocolate chips cookies with a banana heartAdapted from a great recipe of Ruby – That’s so Vegan – about 8 cookies:

– 1 cup flour;

– 1/4 cup unsweetned cocoa powder;

– 1 teaspoon baking powder;

– 1 salt pinch;

– 1/2 cup vegan dark chocolate;

– 1/4 cup sugar;

– 1/4 cup brown sugar;

– 1/4 cup canola oil;

– 1/2 vanilla pod;

– 1/8 cup water;

– 1/2 banana (optional) 

Preheat oven to 350°F (160°C)

Crush the chocolate into chocolate chips. In a big bowl blend flour, baking powder, cocoa and salt together. Stir and add chocolate chips.

DSCF7185In another small bowl, stir together sugar and oil. Then add the vanilla inside the pod and water. Mix together.

Then stir the wet and the dry ingredients together until combined. If the mixture is to dry for a cookie dough, you can add a bit more water.

Make some tablespoon sized balls and put them on an ungreased cookies sheet. Or if you have banana, cut the banana into thin slices. Make small balls with the dough and flaten them. Slide one banana slices in between two chocolate disks. Close them together and put them on a cookies sheet. 

Bake for 10 to 12 minutes top. They are still soft when going out of the oven but will get a bit tougher when drying.

I decorated them with:

– Crystallized ginger;

– Coconut powder;

– Goji berries

which I all added before baking.
